love at sunrise

“For most people, we often marvel at the beauty of a sunrise or the magnificence of a full moon, but it is impossible to fathom the magnitude of the universe that surrounds us.”
Richard H. Baker

Last night I didnt get home from work until almost 8pm. So instead of our usual routine of cook dinner, go running, watch TV/movie- we just watch The Crazies and went to bed (at about 10pm).

This morning the sunrise and bright sky woke me up super early at like 5 am. After making sure adult swim was still on, I rolled up a nice little el for us and we watched Home Movies while we got lifted. Then we made love <3.

Today: 6.29.10

Good Afternoon!!! It is super hot outside today!! which makes me want to strip down and rock my tanks and booty shorts. but of course im super self con about my skin lately and have been wearing my cotton pj pants mostly. i like to be comfy. hehehe.

Anyhoo heres my food plan for today:

Breakfast: Green Smoothie [ 2c spring mix, 1 1/2 bananas, 1/4c aloe, 1c water ]
2nd Breakfast: 1 fried egg, 1 slice of amer cheese and 2 turkey sausage links sauteed on a gluten free english muffin (ener-G i think, its a taste i will def have to get used to but not bad)

Snack:  Dried dates, banana
Lunch: Spring mix salad with strawberries, blueberries and 1/2 avocado
Dinner: Chicken something or the other in the wok

State of My Skin: Today is a good day. Skin is itchy but i wore 3/4 sleeves and pants to work to keep from sweating too much. Took a shower this AM and moisturized with triamcinolone on my body and cetaphil on my face. Used EcoStyler Gel on my hair.

Notes: Last nights pineapple garlic chicken was delicious!!!! heres my recipe since i dont have a pic.

1 lb chicken strips
1 can goya pineapple nectar
1/3c brown sugar
1/4 cup soy sauce
2 cloves of ginger chopped

Rinse chicken and cut into 1 in pieces. Cook in wok until tender. While chicken is cooking, combine the rest of the ingredients until brown sugar is well mixed. Once chicken is done, rinse and wipe wok. Pour pineapple mixture into wok and heat stirring often. After about 3 minutes of cooking, mix 2tblsps of corn starch with some water (thickener). pour this mixture into the wok and stir often allowing the pineapple sauce to thicken. Once the sauce is as thick as you would like, stir in chicken and heat. Honey and I like our sauce thick so I let it cook for 5 to 6 minutes after stirring in the thickener and then add the chicken.

Serve over brown rice and enjoy a sweet and tasty gluten free din din!!

Estoy Aqui!!

Hello once again. My skin and over all mental health are recovering well at this time. I’ve been eating alot of cooked foods but still vegetarian and still gluten free. We finally got our gas turned on and the first meal I made for honey and I was steak and eggs. yuummm-Y!!! Anyhoo back to meal planning:

Breakfast- Green Smoothies -[ watermelon, strawberries, blackberries, blueberries, spring mix, banana]
Snack- Peaches, 1/2 avocado, blackberries
Lunch- Salad -[spring mix, avocado, asparagus and grilled steak]
Dinner – Pineapple chicken in the wok

State of My Skin Today:
Muchooo mejor!!!! My trunk (stomach and back), shoulders, neck and face have completely healed up. I am getting so many comments at work (from understanding coworkers of course) saying how much better my skin is looking. My arms and legs are still very itchy but are healing nicely. and i am just recovering from what i think was an allergic reaction on my palms in which my skin bubbled (??) hardened and cracked and then peeled off (which took a total of 2 weeks)

Thoughts on GF:
I am enjoying being gluten free. I dunno why, but somehow I feel as if being GF puts me in a special club where i have to be extra picky about what i eat. I also can see the results in how i feel and my skins level of itchyness when i have been sticking to my diet or not. I am super happy about where I live because I am surrounded by mexican restaurantes y pupuserias. yes most of the food is accompanied by some flour tortilla or what have you but they also have a plethora of dishes supported by corn flour or white corn flour…pupusas being one of them.

“A pupusa is a traditional Salvadoran dish made of thick, hand-made corn tortilla that is filled with a blend of cheese, beans and sometimes pork or chicken.”

so basically this is my new favorite fast food…when im on the go at work I stop at a pupuseria as opposed to mickeyDs or bk. HAHAHA SCREW YOU MCDONALDS AND YOUR FLOUR BASED BUNS!!!!

ok thats all for now. I must get my mid morning snack and get on the road.

Today: 6.8.10

Ok yesterday was my first day eating ALLLLLL vegan and all gluten free. i ate raw for 90% of the day and my dinner consisted of rice cereal (bobs red mill) and 1/2 avocado and a smoothie with [2 bananas, 1 mango, 1/2 avocado, 1 handful of spinach, 1 cup water] it was super yummy and hunny even commented that it was the best green smoothie i’d made so far.

So anyways today my food plan is:

Breakfast: Green smoothie [1/2 avocado, 1 1/2 bananas, 1 1/2 cup strawberries, handful brocco sprouts, 1 cup carrots, 2 cups spinach, 1 cup water]

Lunch: Spinach salad w/ steam shrimp, carrots, and brocco sprouts

Snacks: 1/2 avocado, orange, peach

Dinner: Rice cereal w/ something or the other…i dunno yet

I enjoy eatin high raw but for dinner i just have to have something warm. I dunno why having a cold salad or smoothie just doesnt satisfy me like it does at breakfast and then i spend the rest of the night snacking. I’m looking forward to to trying some of the raw recipes i’ve seen and hunny’s classmate who is also black and into eating super healthy loaned me one of her vegan cookbooks so i’m pouring over it as we speak…instead of doing work. hahahaha nice i know.

State of My Skin: no shower this AM, the thought of water on my skin repulsed me so i just lotioned up and went on my merry way. Its healing nicely but the soles of my feet are still cracked and painful. 2 nights ago i moisturized and wrapped them in saran wrap which kept them most for almost 2 days so i may do that again tonight. Still super itchy tho.

Today: 6.7.10

Food Plan:

Breakfast: Green Smoothie (w/ spinach, banana, strawberries, brocco sprouts, carrots)

Lunch: Giant spinach salad with carrots, brocco sprouts, steamed shrimp

Snack: Orange, Avocado

Dinner: Giant iceberg salad with carrots, avocado, brocco sprouts, cheese

State of My Skin:

My skin is feeling better today. Still very itchy but not dry. The palms of my hands have been really itchy the last couple of days. My morning moisturizer as held strong since my shower. (cleansed with cetaphil antibacterial soap and applied triamcinoloe and cetaphil after shower)

Also used some Aveeno Gel Cream on my hair.

I visited M.O.M yesterday to look at their gluten free wares. They have alot of options and I def. want to try their gluten free bread. I cant tell if the kind in the freezer is better or not but the sales associate said ppl usually prefer the freezer kinds (ezekial bread).

I’m really hoping that the gluten-free diet helps. I know that consistensy is key but it so hard when mcdeath is staring me in the face saying jsut spend $1. but i will stay strong and I would beat my self up if i slip up. as long as I eat mostly vegan and gluten free I will be happy.

Gluten Free

So after many weeks of suffering through my worst flare up of atopic dermatitis and being sent home from work for the week I got fed up and called in a desperately to have my steroid ointment refilled. Afterwards, I book an appointment with a new dermatologist in Bowie .

The State of My Skin:  painful, itchy, dry, flaky. my feet and ankles were swollen and the skin was thick and cracked and I could barely walk. My skin was also very hot and If i scratched it would weep a stinky yellowish puss which stuck to any thing it contacted. I was so embarrassed of my skin that i was wearing long sleeves and pants in 80- 90 degree weather. It was tough enough for me to even wear flip flops with out freaking out.

So anyhoo, the dermatologist was great. She answered my questions, she asked me questions, she didnt just write me some sripts and usher me out. I loved her. She suggested I try a gluten free diet in addition to my attempt at a high raw/ vegan diet. She also suggest i mix vaseline with water as a moisturizer. not sure how i felt about that one but we’ll see. i’m pretty satisfied with the triamcinolone ointment and cetaphil moisturizing cream for now. I will continue to use them while I adjust my diet and hopefully I can eventually stop scratching so much and only have to use the cetaphil.

So now I’m gluten free. Something clicked when she suggested that since some of my faaaaavorite foods are breads, biscuits, rolls, donuts, etc.  Many articles I’ve read on food allergies suggest that often times the foods that are our “favorites” are usually the one wreaking the most havoc on our bodies and immune systems.  So more gluten free foods and no more processed foods. join me!

Happy Monday everyone!!!

Well I’m here. I dont know how but i made it work super early this morning after literally fighting my alarm clock.

The weekend was great…almost. Friday night the hunny and I went to Camelot DC for his best friends birthday. It was hot and of course i let a skripper clap her booty cheeks in my face for $1. =) Saturday hunny’s old college roomate and his girlfriend came to visit.  It was nice to catch up with them and I made a delicious chilli (recipe from Crockpot365) in my crockpot. I omitted the chicken and added more enchilada sauce and 2 cups of corn. They loved it and I loved it.  I also had another green smoothie for snack and breakfast:

6 whole strawberries (stems included)

1 banana

1 cup of green grapes

2 handfuls of spinach

1/2 cup water, 1/2 cup watermelon juice

Oh it was soooo good and even hubby didnt mind the taste. of course he commented that there was obviously spinach in it but i knew he couldnt taste it over the strawberries and banana.

So now I’m at work dreading this supervision meeting I’m about  to have.  I really just wanna go home and away from my supervisors constant ad libbing!!! grrrr!

Ciao for now!

Day 1

I’m finally ready to start. However, I’ve decided that while I am still going to try to eat a mostly raw vegan diet, allowing myself to have some cooked foods and yogurt seems to be best for my body and my skin.

So today begins the day that I transition. Onto what I ate today:

Chobani Yogurt and Blueberry flax granola from M.O.M

2 oranges

1 avocado (so far)

2 handfulls of spinach

Thats just breakfast and lunch. I havent decided what to have for dinner but the time is nearing and I have some ideas.

Oh and I also made my first green smoothie!! and boy was it super yummy

3 handful of spinach

1 banana

1/2 cup watermelon juice

1 cup water

Very simple and very delicious.  I will definitely try this one again. Anyhoo, Honey’s roommate from Rutgers will be traveling here with his girlfriend tomorrow night to stay for the weekend. I’m not excited about cleaning up the apartment but I am excited about going to see Alice and Wonderland  tomorrow night.

Ciao for now!

Me Gusta Aguacate!!!

Today was a good and bad day. But first I’ll talk about yesterday. Yesterday, I ate really well sticking to my plan of mostly raw foods. I had a Bolthouse Farms Blue Goodness smoothie for bfast. Lunch was a handful of spinach with a whole avocado, a pear, and orange for a snack. Dinner was an avocado and some spinach that I munched on…

Unfortunately, I was super hungry when i woke up this AM and first thing on my minds was that oh-so-tempting Sausage McMuffin. yummm/yuuuuck. lol. Of course i have no will power and I gave in. It was so good for like 5 minutes and then i hated myself. So I went to Giant and got another Boltohouse Smoothie, Chiobani yogurt, and then went to Best Way* (international market near my job) and got 2 avos, a tomato, some peaches, pears and tangerines. this should keep me satisfied through lunch and dinner.

Lunch – spinach/avocado salad, tangerine, Hispanic brand mandarin soda (naturally sweetened)

Snack – Half a pear, tangerine, 6 oz of smoothie

One thing I am a little weird about is feeling like im eating all the time. But I guess since fruits and veggies are my main sustenance that’s ok.

Question: Is shopping at the international market for produce equivalent to organic produce???

*The reason I went here is because their produce prices are consistently lower than the (sale and regular) prices at Giant, SuperFresh and M.O.M
