Today: 6.29.10
Good Afternoon!!! It is super hot outside today!! which makes me want to strip down and rock my tanks and booty shorts. but of course im super self con about my skin lately and have been wearing my cotton pj pants mostly. i like to be comfy. hehehe.
Anyhoo heres my food plan for today:
Breakfast: Green Smoothie [ 2c spring mix, 1 1/2 bananas, 1/4c aloe, 1c water ]
2nd Breakfast: 1 fried egg, 1 slice of amer cheese and 2 turkey sausage links sauteed on a gluten free english muffin (ener-G i think, its a taste i will def have to get used to but not bad)
Snack: Dried dates, banana
Lunch: Spring mix salad with strawberries, blueberries and 1/2 avocado
Dinner: Chicken something or the other in the wok
State of My Skin: Today is a good day. Skin is itchy but i wore 3/4 sleeves and pants to work to keep from sweating too much. Took a shower this AM and moisturized with triamcinolone on my body and cetaphil on my face. Used EcoStyler Gel on my hair.
Notes: Last nights pineapple garlic chicken was delicious!!!! heres my recipe since i dont have a pic.
1 lb chicken strips
1 can goya pineapple nectar
1/3c brown sugar
1/4 cup soy sauce
2 cloves of ginger chopped
Rinse chicken and cut into 1 in pieces. Cook in wok until tender. While chicken is cooking, combine the rest of the ingredients until brown sugar is well mixed. Once chicken is done, rinse and wipe wok. Pour pineapple mixture into wok and heat stirring often. After about 3 minutes of cooking, mix 2tblsps of corn starch with some water (thickener). pour this mixture into the wok and stir often allowing the pineapple sauce to thicken. Once the sauce is as thick as you would like, stir in chicken and heat. Honey and I like our sauce thick so I let it cook for 5 to 6 minutes after stirring in the thickener and then add the chicken.
Serve over brown rice and enjoy a sweet and tasty gluten free din din!!
